The Nitro Wash process is Julio Cesar Madrid Tisnes' signature innovation: after pulping, the beans are placed in a sealed bioreactor and inoculated with a starter culture of yeast, bacteria, and fruit must, a true co-fermentation. Expect tons of sweet, fruity aromatics up front.
